Zucchini soup

 

Serves 4

 

In a heavy saucepan, combine:

2 medium zucchini, trimmed and diced

2 tablespoons olive oil

2 cloves garlic, thinly sliced

Cook the zucchini until it is very soft, about 20 minutes.

Remove from the heat and puree. 

Return the pureed zucchini to the saucepan.

Add:

2 cups water or broth

½ cup cream

1 small bunch basil, chopped

1 small bunch parsley, chopped

½ cup aged hard cheese, grated

Salt and black pepper

Heat thoroughly.

Serve warm.
