Wood fire waffles
In a small bowl, combine:
1 tablespoon instant yeast
¼ cup milk
Stir to combine.
In a large mixing bowl, combine:
3 eggs, beaten
2¾ cups milk
12 tablespoons unsalted butter, melted and cooled to room temperature
¼ cup sugar
1½ teaspoons sea salt
1 teaspoon vanilla extract (optional)
Whisk a third time.
4 cups flour
With a wooden spoon, stir the flour into the batter.
Cover the bowl with a wet tea towel, and let rise in a warm place until double in bulk, about 1 hour. If planning ahead, you can leaven the dough in the refrigerator overnight.
Stir to deflate the batter.
Place a waffle iron on a preheated grill over a bed of hot coals. Alternatively, the waffle iron can be placed directly on the coals.
When the waffle iron is hot, butter it lightly and ladle in enough batter to fill evenly.
The waffles will be done when nicely golden-brown. Cooking time will vary with the heat of the fire.
