Wood Fire Grilled Trout


Prepare a fire and allow it to burn at least 30–60 minutes to establish a bed of hot coals. When the hot coals have been created, place a grill over them to preheat.

Meanwhile clean:

Fresh trout

Season the insides with:

Sea salt

Fresh herbs (chives, sage, rosemary, or thyme)

Brush the outsides with:

Olive oil

Lightly oil the grill.

Place the trout on the hot oiled grill, and cook for about 2–4 minutes.

Turn the fish over to cook the other side, about 2 minutes.

Remove the trout from the heat, cover and let rest for 5 minutes.

Uncover and place the trout on a serving plate with:

Lemon wedges

Serve immediately.
