Vodka and spruce tip soda

 

Serves 4

 

In a food processor, place:

            2 cups spruce tips, trimmed of papery sheath and stem

Process until finely chopped. Reserve.

In a saucepan, combine:

            1 cup water

            1 cup sugar

            ¼ teaspoon sea salt

Place over medium heat. Bring the mixture to a simmer, stirring to dissolve the sugar and salt, for 1 minute. Remove from heat and allow the syrup to cool slightly. Add:

Allow the mixture to steep for 3 hours at room temperature, then strain through a fine mesh sieve into a glass jar. Discard the pulp.

Refrigerated, the syrup will keep for about 1 month.

 

To serve:

Fill an 8-ounce glass with ice cubes. Add:

            2 ounces vodka

            2 ounces spruce tip syrup

Stir gently. Top with:

            Seltzer water to fill glass

Garnish with:

            Fresh spruce tips
