Spruce Tip Soda

 

Spruce Tip Syrup

In a food processor, place:

1 cup spruce tips, trimmed of papery sheath and excess stem

Process until finely chopped.

Set aside.

In a sauce pan, combine:

1 cup sugar

½ cup water

¼ teaspoon sea salt

Place over medium heat and whisk until the mixture come to a boil, then simmer for 1 minute,

Remove from the heat and stir in the spruce tips.

Let the mixture steep for 1 hour.

Strain the mixture through a fine mesh strainer into a glass jar.

Discard the solids.

Refrigerate.

 

Serve

In a glass, combine:

            Ice, to fill glass

            2 tablespoons wild spruce tip syrup

            1 cups cold sparkling water

Stir and serve.
