Sautéed Spinach with eggs on top


Preheat the oven to 450°f.

Wash and gently dry in a kitchen towel:

1 pound spinach

In a saucepan, heat until hot:

1 tablespoon butter

1 tablespoon olive oil

Add the spinach and sauté until wilted, about 1–2 minutes.

Make four hollows in the spinach and place:

4 eggs

Bake in the oven for 4 minutes.

Add a pinch of:

Salt and pepper

Garnish with:

2 tablespoons parsley

Serve immediately.
