Rhubarb Soda

 

Rhubarb Syrup

In a saucepan, combine:

            4 cups rhubarb, chopped

            1 cup sugar

            1 cup water

Over medium heat, stir the mixture and simmer until the rhubarb is soft, about 15 minutes.

Strain the mixture through a fine mesh sieve into a glass jar.

Discard the solids.

Refrigerate.

 

Serve

In a glass, combine:

            Ice, to fill glass

            4 tablespoons rhubarb syrup

            1 cup cold seltzer water

Stir and serve.
