Rhubarb Compote


Preheat the oven to 375° F.

In an oven proof-baking dish, combine:

1 pound rhubarb, diced

¼ cup sugar

4 tablespoons water

Toss the ingredients together and bake for about 30 minutes, until the rhubarb is soft and the juices are starting to caramelize.

Serve warm, at room temperature, or chilled.
