Pear Cake

 

Serves 8

 

Preheat the oven to 400°f.

Smear a round cake pan with:

Salted butter

And sprinkle the pan with:

Breadcrumbs, finely chopped nuts, or sugar

In a mixing bowl, combine:

2 eggs

¼ cup milk

¾ cup sugar

¼ teaspoon salt

Mix well and add:

1½ cups flour

Mix well again to make a fairly stiff batter.

Gently mix in:

4 pears, quartered, cored, and thinly sliced

Pour the pear batter into the prepared cake pan.

Dot the top of the batter with:

1½ tablespoons salted butter, cold, thinly sliced

Bake for 45–50 minutes; the top should be golden brown.

Let the cake rest for 10 minutes and transfer to a serving plate. 

 

Serve warm or at room temperature with:

Fresh whipped cream

Dried cranberries, slivered
