Maple Granola

 

Makes about 7 cups

 

Preheat the oven to 400f.

In a large bowl, combine:

3 cups oats

1½ cups raw almonds, slivered

½ cup raw pumpkin seeds

½ cups raw sunflower seeds

1/3 cup raw sesame seeds

Set aside.

In a saucepan, combine:

½ cup maple syrup

½ cup honey

4 tablespoons sunflower oil

3 tablespoons water

¼ teaspoon salt

Bring to a simmer over low heat, stirring.

Pour the syrup mixture over the oat mixture and stir well.

Line a large baking pan with parchment paper.

Spread the granola evenly in the pan.

Bake until golden brown, about 12–15 minutes, stirring once or twice.

On top of the baked granola, sprinkle:

1 cup dried coconut flakes

Bake until the coconut is lightly brown, about 3 minutes.

Remove from the oven and stir in:

1 cup dried cherries, roughly chopped

Cool to room temperature and store in a glass jars.
