Maple Cottage Pud

 

Serves 6

 

Preheat the oven to 350°f.

Butter a deep baking dish (at least 3–4 inches deep).

In a bowl, cream together until light:

2 tablespoons butter, room temperature

2½ tablespoons sugar

Add and mix:

1 egg

Add and mix the dry ingredients:

1 cup flour

¼ teaspoon salt

2 teaspoons baking powder

Add and mix:

½ cup milk

In a saucepan, bring to a boil (watch carefully, it can easily boil over):

1 cup maple syrup

Pour the hot syrup into the buttered baking dish.

Pour the batter over the syrup.

Bake 20–25 minutes until the top is light brown.

Remove from the oven.

Immediately invert the pudding onto a plate with raised edges.

 

Cut into wedges and top with:

Fresh whipped cream and a drizzle of maple syrup
