Ice Lemon Balm and mint infusion

 

Fill a large heat-proof glass jar with:

5 large sprigs lemon balm

5 large sprigs mint (any fresh mint will work)

Boiling water, to fill

Cover the jar, let steep for 1–2 hours.

Strain the mixture through a sieve into another glass jar.

Discard the herbs.

Cover and refrigerate.

 

Serve

In a glass, combine:

Ice, to fill glass

Chilled lemon balm mint infusion, to fill glass

Stir and serve with:

Squeeze of lime juice

Slice of lime

sprig of mint
