Grilled eggplant

 

Serves 4

 

Prepare the eggplant:

4 small eggplants, stem trimmed, sliced ½ inch thick

Rub both sides of each slice with:

Olive oil

Sprinkle with:

Sea salt

Over a bed of hot coals, on a preheated and lightly oiled grill, cook the eggplant slices on each side until soft and golden-brown, about 3–5 minutes per side.

 

Serve warm with:

Lemon slices
