Frost grape soda


Serves 4


In a heavy-bottomed pot, place:

            8 cups wild frost grapes, destemmed

            2 cups water

            3 cups sugar

Bring to a gentle simmer, stirring to dissolve the sugar. Simmer for 4–5 minutes, until the grapes split. Mash the grapes and transfer to a fine mesh sieve or muslin jelly bag and allow the liquid to drain into a large bowl for several hours. Gently squeeze the grapes to extract as much liquid as possible. Discard the seedy pulp. Place the grape syrup in a glass jar and chill. Refrigerated, the syrup will keep for about 1 month.


To serve:

Fill an 8-ounce glass with ice. Add:

            ½ cup frost grape syrup

            Seltzer water to fill glass

Garnish with:

            Cluster of frost grapes
