Bitter chocolate mousse with creeping snowberries


Serves 6


In a heatproof bowl, place:

            4½ ounces bittersweet chocolate, chopped

Melt the chocolate over a pan of hot (not boiling) water. In another bowl, place:

            5 egg whites, room temperature

Beat the egg whites until they form soft peaks. Add:

            3 tablespoons sugar

Continue to beat the whites until slightly firmer peaks are formed. Set aside.

To the melted chocolate, add:

            2 egg yolks, room temperature

Stir to combine. Add ⅓ of the egg whites, whisking to combine, and then gently fold in the remaining egg whites.

Spoon the mousse into one large bowl or individual dishes. Chill for 2 hours.


Serve with:

            Creeping snowberries
