Apple Pancakes


Serves 4–5

In a bowl, combine:

1½ cups all-purpose flour

½ cup whole-wheat flour or fine cornmeal

1½ teaspoons baking powder

½ teaspoon baking soda

1 teaspoon sea salt

Stir to combine. In another bowl, combine:

1 cup milk

1 cup plain yogurt

2 eggs, beaten

¼ cup unsalted butter, melted

3 tablespoons honey

Mix together the wet and dry ingredients until barely combined. Preheat a skillet or griddle. Prepare and reserve:

1–2 apples, cored and thinly sliced into rings

In a small bowl, combine:

3 tablespoons sugar

2 teaspoons ground cinnamon

Stir to combine. Reserve.

Lightly butter the hot skillet. Ladle ¼ cup scoops of the pancake batter onto the griddle, allowing room for them to spread. On top of each pancake, place:

Slice of the prepared apple

Sprinkle of the cinnamon-sugar

Slivers of butter

Cook until the bottoms are golden brown, about 2 minutes. Flip the pancakes and cook until the second side is golden brown, about 2 minutes more.

Serve with maple syrup.
