Apple, cheddar, and sage biscuits


Makes about biscuits

Preheat oven to 425°F.

In the bowl of a food processor, combine:

1½ cups all-purpose flour

½ cup pastry flour

2 teaspoons baking powder

¼ teaspoon baking soda

¼ teaspoon sea salt

¼ teaspoon cayenne pepper

2 tablespoons chopped fresh sage

Pulse to combine. Add:

½ cup unsalted butter, chilled and diced

1 cup grated cheddar cheese

1 cup cored and grated apples

Pulse 2–3 times, briefly, to combine. Add:

½ cup milk, cold

⅓ cup yogurt, cold

Pulse 2–3 times more to barely combine.

Transfer the dough to a lightly floured board and pat out into a 12-inch round that is 1-inch thick.

Cut dough into biscuit-sized shapes and place on a baking sheet lined with parchment paper. Bake until golden, 10–12 minutes.

Serve warm.
